| This is a typical place setting I use for SPAMARAMA. These are the display plates. I need up to twelve other plates for the judges. I have won a number of trophies. My collection has grown since I am the current holder of the SPAMERICAS CUP. I have now won the cup seven times. This year I cooked Sicilian Spice rubbed SPAM Fillets with Roasted Patty-pan Squash and SPAM Truffle Risotto. Last year's entry was easier to remember, Snails in Pails. It had esSPAMgo served in the shells in a little stainless steel buckets. My string of Cup wins started with my famous Herb Crusted Rack of SPAM. A trio of bone-in SPAM chops served with a SPAM Lite and Butternut squash puree.
I'm working at the Renaissance Hotel in Montgomery, AL and the theme of the restaurant cuisine is New South. So I have learned some exciting new recipes for southern comfort food. Now I am entering in the State Fair cook offs and the Alabama Wildlife Federation cook offs with some new twists of old favorites. Some may have a little SPAM in them, who knows?
